- 250 g Flour
- 100 g Vanilla sugar, homemade
- 125 g Butter
- 1 Pc. Egg, size M
- 1 pinch Salt
- I make all my shortcrust pastries by hand, because that’s the only way I can get a feeling when all the ingredients are mixed together, the longer one shouldn’t knead a shortcrust pastry. I don’t make “heaps” either, but put everything in a large, suitable bowl and knead quickly. What is very important! all ingredients should be at the same temperature and that is “room temperature”. Then normally nothing can go wrong with the dough.
- You can also vary the flour, depending on your taste, wholemeal or spelled flour, or mix. But then it can happen that a little more butter or a little egg has to be added due to the different glue content of the flours. At the end the dough must be smooth and must not “crumble”
- When all the ingredients have been kneaded well, wrap the dough in cling film and leave it in a cool place for an hour so that the ingredients can be mixed together.
- Now roll out the dough on a lightly floured work surface to 3mm thickness, turn the dough once or twice and always make sure that the area underneath is lightly floured so that nothing “sticks”. - When the dough is the desired size, it is cut out with a cake ring and placed on a baking sheet lined with baking paper, then pierced several times with a fork and baked at 180 ° O / U in the preheated oven on the middle rack until it has a has a beautiful even color. Then carefully pull from the baking sheet and let cool down on a wire rack.
- Tip: ….. in order to always have exactly the same thickness of the dough when rolling out, it is advisable to get strips made of wood or aluminum at the hardware store, preferably with a thickness of 2.3 and 5 mm, each The bar should be at least 50 cm long.
