Basil almonds

Ingredients for 1 servings:

  • 200 g almonds, unpeeled
  • 2 egg whites
  • 40 leaves basil, large
  • 1 tsp salt
  • 3 tbsp Parmesan, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Beat one egg white until stiff. Blend the basil with some of the second egg white. You’ll need to keep an eye on how much egg white you need. It shouldn’t be too runny. Stir the Parmesan cheese, salt, and basil into the lightly beaten egg white and spread over the almonds. Stir well. Preheat the oven to 150 degrees Celsius (300 degrees Fahrenheit) and spread the almonds on a baking sheet lined with parchment paper. If necessary, let the almonds drain slightly. Bake for 30 minutes, turning twice in between.
