Ingredients for 4 servings:
- 2 ½ kg chicken, ready to roast
- some salt
- some paprika powder
- olive oil
- 3 medium-sized onions, finely chopped
- 400 g cherry tomatoes, quartered
- 3 bell peppers, red
- 200 g mushrooms, small
- 1 clove(s) garlic, chopped
- some thyme
- some oregano
- some cayenne pepper
- some parsley, fresh
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes
Cut up the chicken, rub it with salt and paprika, and brown it all over in olive oil. Add the onions and fry. Dice the tomatoes and peppers and add them to the chicken pieces along with the mushrooms. Mix the garlic with salt, thyme, oregano, and cayenne pepper and add it to the pan. Mix everything well, cover, and simmer over low heat for about 40 minutes. Sprinkle with finely chopped parsley and serve. Serve with rice and salad.
