Bautz'ner mustard soup

Ingredients for 4 servings:

  • 350 g potatoes
  • 2 small onions
  • 1 tbsp butter
  • 500 ml vegetable stock
  • 350 ml milk
  • 2 tbsp mustard, medium hot (Bautz’ner mustard)
  • 2 tbsp mustard, grainy, sweet (Bautz’ner Kremser mustard)
  • 1 dashes lemon juice
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel and dice the potatoes. Peel and dice the onions. Melt the butter in a saucepan and sauté the onions until translucent. Add the potatoes and sauté for 2 minutes. Pour in the vegetable stock and milk, bring to a boil, and cook the potatoes over medium heat for 15-20 minutes. Remove the soup from the heat and puree with a hand blender. Season with salt, pepper, nutmeg, lemon juice, and mustard. Do not let the soup boil again. Serve garnished with milk foam, grated nutmeg, and garden cress, if desired.
