Ingredients for 2 servings:
- 250g spaghetti
- 600 ml red wine, strong
- 3 clove(s) garlic, squeezed
- chili
- Salt
- pepper
- 1 tbsp mixed herbs, 6 herbs, frozen
- 1 tsp olive oil
- 1 tbsp butter
- Parmesan
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
spaghetti cooked in red wine
Gently heat the olive oil in a large pan and briefly brown the crushed garlic with the chili, either powder or a very finely chopped chili pepper, over medium heat. Deglaze with the red wine and simmer gently. Meanwhile, add the spaghetti to a pot of boiling water and leave to stand for a minute. Remove the pasta from the pot and add it to the pan with the wine. Cook the spaghetti, stirring frequently, until al dente. This takes about 8-10 minutes. The wine should be completely absorbed by the spaghetti. If necessary, add a little more wine to the pan if it is not yet al dente. Once the wine has been absorbed and the spaghetti is al dente, season with salt and pepper. Stir the 6-herb frozen mixture and butter into the pasta. Then serve the pasta on the plate. If you like, sprinkle some Parmesan cheese on top.
