Ingredients for 1 servings:
- 1 kg minced meat, seasoned
- 200 g gherkins or garlic gherkins
- 1 can kidney beans, 125 g drained weight
- 1 can corn kernels, 125 g drained weight
- 15 tbsp barbecue sauce
- 250 g cheese, grated
- 2 eggs
- e.g. breadcrumbs

makes about 60 pieces
Cut the cucumbers into very small cubes. Drain the beans and corn. Finely chop the kidney beans with a knife. Place the ground beef in a bowl, add the cucumbers, beans, corn, barbecue sauce, grated cheese, and eggs. Knead everything thoroughly for about 5 minutes until the mixture pulls together. Then bind with breadcrumbs. I like to use panko flour, as it makes the meatballs even fluffier. Now form small meatballs and place them on a baking sheet lined with baking paper. Bake the meatballs in a preheated oven at 200°C (fan oven) on the middle rack for 15 minutes, until they are nicely browned. Remove the meatballs from the baking sheet with tongs and remove some of the fat on kitchen paper.
