Ingredients for 3 servings:
- 750 g green beans (preferably runner beans)
- 300 g turkey meat, shredded
- 2 sausages, e.g. Franconian
- 80 g bacon, diced
- ½ onion(s)
- 300 ml vegetable stock
- some olive oil
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- salt and pepper
- Paprika powder
- nutmeg
- 1 shot of vinegar
Instructions
Working time approx. 40 minutes; Rest time approx. 1 hour 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 5 minutes
hearty with bacon, turkey and bratwurst
Mix the turkey strips with the soy sauce and cornstarch and let it simmer for about an hour. Trim the beans and cut them into strips. Finely dice the onion. Heat a little olive oil in a wide pan and fry the bacon cubes in it. Once they have taken on some color, add the diced onion and fry until they develop a nice roasting aroma. Now add the prepared beans and immediately mix with a dash of vinegar. Continue to sauté everything with the diced onion and bacon for a while. Season with a little pepper and nutmeg, add the vegetable stock, and simmer the vegetables for about 15-20 minutes at low heat, until the beans are al dente. Meanwhile, heat olive oil in a pan, season the turkey strips with pepper and paprika, and fry them lightly. In another pan, fry the sausages until crispy. Then cut them into pieces. When the beans have reached the desired consistency, add the roasted turkey breast strips and sausage cubes to the vegetables, stir in lightly, season with salt if desired, and let stand for another 5 minutes at the lowest heat possible. Then serve. This goes very well with boiled potatoes.
