Bean buttermilk soup

Ingredients for 4 servings:

  • 500 g potatoes, diced
  • 700 g beans, green
  • 500 ml meat broth
  • 1 liter buttermilk
  • 3 tbsp lemon juice
  • some ginger, grated
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

from fresh beans

Cut the beans into pieces and cook with plenty of salt, then drain. Cook the potatoes in the meat broth until very soft, then puree them. Add the buttermilk and the cooked beans, and season with lemon juice, pepper, ginger, and salt.
