Ingredients for 2 servings:

  • 600 g beans (chopped), green
  • 100 g bacon, diced
  • 2 m.-sized carrot(s)
  • 5 potatoes
  • 1 ½ tbsp flour
  • e.g. chicken broth
  • 1 large onion(s)
  • butter
  • oil

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Preheat the oven to 150°C. Dice the carrots, onion, and potatoes. Cut the beans into 4cm pieces. In an ovenproof pot, fry the bacon cubes in a little oil. Then add the diced onion and sauté briefly. Add the carrots and sauté for about 7 minutes, then briefly sauté the beans. Season with salt and pepper and pour in enough stock to cover the vegetables. Place the diced potatoes on top, but do not stir them in. Bring to a boil, then cover and place the pot in the oven for about 25 minutes. Make a fairly runny roux from the butter, flour, and stock and use this to thicken the soup at the end.
