Bean soup with broad white beans

Ingredients for 4 servings:

  • 2 large cans of white beans, pre-cooked
  • 1 ring/s of meat sausage
  • 1 stalk(s) leek (depending on size)
  • 1 small can of tomato paste
  • salt and pepper
  • Paprika powder, sweet
  • some fat or margarine

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Clean the leek and slice into rings. Remove the skin from the sausage and cut it into bite-sized cubes. Heat the fat in a soup pot and fry the sausage cubes. They should already be nicely browned. Add the tomato paste and fry briefly, then briefly sauté the leek. Now add the beans and their stock and let the whole thing simmer gently for a few minutes. Season to taste with salt, pepper, and sweet paprika. We like to serve this with a fresh baguette or bread roll. It’s a quick everyday meal and always tastes delicious!
