Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Separate the rind from the bacon, cut the bacon into wide strips, and fry in olive oil with the rind. Finely chop the onions and fry them in the fat. Add tomato paste and fry. This is important for the flavor! Pour in the wine, let it simmer briefly, add the beans (with the liquid), and add the chicken stock—maybe not all at once—check how much liquid is needed first. Add the herbs and other spices, and perhaps add chopped sausages to taste. I always use Frankfurter beef sausage. Let everything simmer gently. The soup is actually ready immediately, but the longer it simmers, the better it tastes. Remove the rind before serving.
