Bean vegetables with coconut milk and mint

Ingredients for 4 servings:

  • 500 g beans (green beans), fresh or frozen
  • 1 bunch of spring onions
  • 1 onion(s) (vegetable onion)
  • 2 cloves garlic
  • 1 chili pepper(s)
  • 1 tbsp oil (soybean oil)
  • 1 can coconut milk
  • Salt
  • Pepper from the mill
  • Paprika powder, hot
  • 1 pot of mint (alternatively dried)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the beans and spring onions. Slice the spring onions into rings. Peel and dice the onion. Peel and chop the garlic. Deseed the chili pepper and slice it into fine rings. Heat the oil. Add the garlic, chili, and vegetables and fry. Deglaze with coconut milk and simmer for about 15 minutes. Season to taste. Pick 10 large mint leaves, cut them into strips, and stir in 2 minutes before the end of cooking (if using dried mint, you can add it along with the other spices). Serve with oven-fresh flatbread or basmati rice.
