Beans in tomato sauce Portuguese style

Ingredients for 4 servings:

  • 200 g beans (dried)
  • 1 onion(s)
  • 3 tbsp olive oil
  • 1 bay leaf
  • 100 g beef, pork or poultry
  • 1 garlic clove(s)
  • 1 can of tomatoes (cut into pieces)
  • salt and pepper
  • e.g. parsley

Instructions

Working time approx. 10 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 40 minutes; Total time approx. 6 hours 50 minutes

Soak the beans in water for several hours (preferably overnight) and then cook them in the soaking water until tender. Do not throw away the cooking water. For the sauce, dice the onion and cut the meat into small pieces. Leftover meat can also be used. Finely chop the garlic. Heat olive oil in a pan and sauté the onion. Add the bay leaf and pieces of meat and fry. Add the garlic and sauté briefly. Then add the tomatoes and a little of the bean water. Now simmer everything with the lid on low for about 20 minutes until the sauce has become creamy. Gradually add a little more of the bean water if necessary. Then add the beans and simmer for another 10 minutes. Finally, season with salt, pepper and chopped parsley. This goes perfectly with rice and pan-fried meat.
