Beautiful colorful lentil soup

Ingredients for 4 servings:

  • 100 g celery, diced
  • 100 g carrot(s), diced
  • 1 onion(s), diced
  • 1 garlic clove(s), diced
  • 5 large potatoes, diced
  • 2 Cabanossi, diced
  • ½ liter broth
  • salt and pepper
  • marjoram
  • chili powder
  • nutmeg
  • 1 bell pepper(s), red, diced
  • 1 cup of red lentils, a small coffee cup
  • 1 cup of cream
  • 3 spring onions, in rings, only the green part
  • 1 Bockwurst
  • some olive oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Sauté the celery and carrots in olive oil. Add the onions and garlic and continue sautéing. Add the potatoes, Cabanossi, broth, and seasonings. Simmer for 15 minutes until soft. Add the peppers, lentils, and cream and cook for another 10 minutes. Add the spring onions and the sausage and let it simmer for a few minutes. Add more broth or cream, if desired, and season to taste. Serve the lentil soup with baguette.
