Beef broth

Ingredients for 4 servings:

  • 200 g beef bones
  • 1 marrow bone
  • 200 g soup meat
  • 1 tsp peppercorns
  • 1 small onion(s)
  • 1 bunch of soup vegetables
  • Salt and pepper, black

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 55 minutes

Wash the bones and meat, cover with cold water in a pot. Quarter the unpeeled onion and add it with the peppercorns. Bring to a boil, reduce the heat, and skim the foam frequently. Simmer for 1 1/2 hours, just until just tender (do not boil). Skim the foam occasionally. Roughly chop the vegetables and add them to the pan after 30 minutes. Strain the broth, return to a boil, and season.
