Beef Consommé with Marrow Dumplings and Vegetables

The perfect beef consommé with marrow dumplings and vegetables recipe with a picture and simple step-by-step instructions.

Vegetables for the garnish:

  • 2 Pc. Carrots
  • 1 Pc. Leek
  • 1 Pc. Onion
  • 150 g Fresh celery

Beef consommé:

  • 750 g Beef
  • 2 Pc. Carrots
  • 1 Pc. Leek
  • 1 Pc. Onion
  • 150 g Fresh celery
  • Salt and pepper
  • Water

Bone marrow dumplings:

  • 500 g Marrow bone
  • 2 Pc. Eggs
  • 100 g Breadcrumbs
  • Salt and pepper
  • Nutmeg

Beef consommé:

  1. Cut the beef and vegetables into small pieces in a saucepan with about 5 liters of cold water. Heat everything slowly on a low flame when it is warm, turn it up and bring to the boil. Then simmer gently for about 2 hours. Keep adding more water so that there is about 5 liters of broth at the end. At the end, strain the broth and season with salt and pepper.

Bone marrow dumplings:

  1. Scrape the pulp out of the bones and work it into a dough together with the eggs, breadcrumbs and spices. Let this simmer in the broth for about a quarter of an hour.

Vegetable garnish:

  1. Chop the vegetables and add them to the broth when the dumplings are boiling in it. Cook for about 8-10 minutes.
