Beef Fillet Strips in Grana Padano Coating

- 600 g Beef fillet
- 400 g Grana Padano
- 3 Pc. Sweet potato
- 0,25 liter Red wine
- 0,25 liter 80
- Finely grate the whole 400 g Grana Padano and sprinkle 300 g on a baking sheet in 8 round circles (approx. 10 cm in diameter). Preheat the oven to 150 degrees. Please wait with the cheeks until the beef fillet is fried.
- Peel the sweet potatoes and cook them in salted water until soft. Then puree with the milk and the rest of the Grana Padano and season with salt and pepper.
- Season the beef fillet strips (10 cm long and about 2 cm wide) with salt and pepper. Sauté in the pan for approx. 2 minutes on each side (depending on the cooking level) Take out of the pan, keep warm and let rest. Only now should you put the Grana Padano trays in the oven and wait until the Grana Padano begins to melt. As soon as the Grana Padano has melted into a mass, remove it from the oven and from the tray. Let cool down briefly and then wrap around the beef fillet strips. Please keep the whole thing warm.
