Beef fillet under an olive oil, mustard and herb crust

Ingredients for 4 servings:

  • 750 g beef fillet(s)
  • 1 bunch of flat-leaf parsley
  • 1 bunch of thyme
  • ½ bulb(s) garlic
  • 3 tbsp mustard, hot and mild mixed
  • 6 tbsp olive oil
  • 4 tbsp breadcrumbs
  • 1 pinch(s) cumin
  • salt and pepper
  • 3 tbsp mountain cheese, aged, freshly grated

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

First, prepare the topping and let it marinate for at least 1 hour. Finely chop the garlic and herbs, mix thoroughly with the remaining ingredients, and chill. Season the fillet with salt and pepper and sear on all sides in olive oil and fresh thyme until just browned. Brush a baking dish with oil, add the fillet, and spread the prepared herb mixture about 1/2 cm thick, including the sides. Cook in an oven preheated to 120-130°C for about 1 hour. The cooking time should be adjusted to individual taste. Then remove the meat and let it rest for a moment under foil before slicing. Mashed potatoes go very well with this dish.
