Beef fillet with balsamic vinegar

Ingredients for 4 servings:

  • 4 slice(s) of beef fillet(s), approx. 3 cm thick
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 sprig(s) rosemary
  • 1 sprig(s) of thyme
  • 5 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 20 g butter
  • Salt and pepper from the mill

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel and finely chop the onion and garlic. Add olive oil and butter to a pan and briefly sauté the onion, garlic, rosemary, and thyme. Add the fillets and sear for 1 minute on each side, season with salt and pepper, and remove from the pan. Deglaze with balsamic vinegar, bring to a boil, add the fillets to the pan, turn briefly, pour over the stock, and place in the oven at 120°C for 10 minutes. Arrange the fillets on a large plate with a little stock and garnish with fresh herbs. Tip: Serve with baguette or lightly salted flatbread.
