Beef fillet with spiral potatoes and green asparagus for the air fryer

Ingredients for 2 servings:

  • 2 beef fillet steaks, approx. 200 g each
  • 2 medium-sized potatoes, waxy
  • 10 stalk(s) asparagus, green
  • 1 tbsp olive oil
  • e.g. salt and pepper
  • e.g. Paprika powder, smoked
  • e.g. garlic powder
  • some butter for frying
  • some pine nuts

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Brush the potatoes and place them on a skewer. Using a sharp knife, make spiral cuts all the way to the skewer. Brush the potatoes with olive oil, season with a spice mix (I used salt, smoked paprika, and garlic powder), and cook for 20 minutes at 160°C. Then keep the potatoes warm in the oven at 80°C. Now sizzle the fillet steaks in a preheated air fryer at 200°C for 8-10 minutes. Note: I cooked them for 8 minutes, but I think 9 minutes would be optimal. They were medium throughout, but were a little too cooked. But that’s a matter of personal preference. Wrap the steaks in foil and set them aside. While the meat is cooking, toast some pine nuts in a pan without any fat and place them on a small plate. Now fry the trimmed raw asparagus in butter for about 4 minutes and season with salt and pepper. Arrange everything on plates and enjoy.
