Beef Leg Slice
The perfect beef leg slice recipe with a picture and simple step-by-step instructions.
- 2 Pc. Beef meat fresh leg slice
- 1 disc Fresh celery
- 1 Pc. Fresh onion
- 1 Pc. Carrot
- 2 Pc. Leek
- 2 tbsp Flour
- 1 tsp Tomato paste concentrated three times
- 2 Pc. Tomatoes dried in oil
- Pepper from the grinder
- Salt
- Chilli (cayenne pepper)
- Green as a garnish
- Oil for frying
- Clean the meat slices, season, brush with mustard, flour and fry on both sides. Add the root vegetables (celery, carrots, onions, leeks) and the pickled tomatoes or tomato paste and fry with them. Deglaze with red wine or meat stock. Simmer for at least 60 minutes on a small fire, until the meat is cooked through.
- When the meat is tender, keep it warm and prepare the sauce. To do this, mash the fried vegetables and pass them through a sieve. Season to taste with salt, pepper, chilli and, if necessary, thicken with a little sauce thickener.
- Return the meat to the sauce and heat. We also had cauliflower (my favorite vegetable) and boiled potatoes.
