Beef roulade

Ingredients for 4 servings:

  • 4 beef roulades
  • 1 onion(s)
  • 2 gherkins
  • 4 slice(s) ham or bacon or bacon cubes
  • Mustard
  • 2 bay leaves
  • 4 carnations
  • nutmeg
  • Sauce thickener
  • 150 ml cream
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Spread out the roulade and season lightly with salt, pepper, and paprika inside and out. Spread mustard on one side. Place the ham (or bacon/diced bacon) on top. Place 1/2 a gherkin on top. Finely slice the onion and arrange it on top. Make sure that all of this is on the left or right half (for rolling up). Now roll up the roulade from one side and tuck in the sides (so nothing gets lost). Tie it with string or close it with a roulade pick (or toothpick). Heat the fat and brown the roulades on all sides. Fill with water so that the roulades are 3/4 full. Add the bay leaves, cloves, and a pinch of nutmeg. Cook for 3/4 of an hour, turning occasionally. Thicken with a sauce thickener, add a little cream, and season to taste with salt, pepper, paprika, and perhaps a little more mustard. This goes very well with tagliatelle or spaetzle.
