Beef Roulade

The perfect beef roulade recipe with a picture and simple step-by-step instructions.

  • 6 piece Fresh beef roulades
  • 6 Slices of ham (raw or diced ham)
  • 6 Gherkins
  • 1 tsp Tomato paste
  • Salt, pepper, paprika, mustard
  • 350 Vegetable broth or meat broth
  • 1 tbsp Oil
  • 3 piece Carrots
  • 2 piece Onions
  1. Brush the roulades with mustard, season, fill with ham, cucumber and onions to taste, roll up and pin.
  2. Fry them well one after the other in a saucepan with 1-2 tbsp oil and then fry the carrots and onions.
  3. Stir in the tomato paste and fry briefly, then put the roulades back in the pan
  4. Deglaze with about 350 ml of vegetable stock and let simmer for 3 hours. I pureed the sauce. You don’t need to tie them with the vegetables.
