Beef Soup with Udon Noodles

The perfect beef soup with udon noodles recipe with a picture and simple step-by-step instructions.

Meat & stock:

  • 500 g Beef soup meat
  • 2 Soup bones
  • 1 Onion
  • 2 Garlic cloves
  • 1 Carrot
  • 1 Pc. Leek
  • 1 Pc. Celery root
  • 2 Tomatoes
  • 1 tsp Peppercorns
  • 4 Juniper berries
  • 4 Allspice grains
  • 4 Cloves
  • 1 tsp Coriander
  • 2 Cardamom pod
  • 2 Bay leaves
  • 1 Pc. Mace
  • 1 tsp Salt
  • 1,5 liter Water

Broth-Vietnamese style:

  • 1,5 liter Basic stock from above
  • 1 Lemongrass stick
  • 1 Star anise
  • 3 cm Fresh ginger
  • 1 tbsp Rapeseed oil
  • 1 Clove of garlic
  • 1 tbsp Tomato paste
  • 1 tsp Sweet paprika powder
  • 3 tbsp Fish sauce
  • Telly cherry pepper

Inlay:

  • 350 g Boiled beef from above
  • 2 tbsp Bean sprouts
  • 100 g Oyster mushrooms
  • 1 Spring onion fresh
  • 1 Romaine lettuce hearts
  • 2 Boiled eggs
  • Coriander leaves
  • 1 tbsp Butter
  • 200 g Boiled Instant Udon Noodles
  • 200 g Other

Basic broth:

  1. Halve the onion and fry brown with the skin in a large saucepan. At the same time, peel the carrot and celery, cut roughly and also roughly cut. Clean the leek and wash the tomatoes. Add with spices, herbs, salt and soup meat. Cook everything for about 2.5 hours! Then strain the broth and put the meat aside! Soak the pasta for about 30 minutes.

Vietnamese style broth:

  1. Divide the lemongrass 3/3 times with a knife, peel and roughly chop the ginger and bring to the boil with the star anise and stock. Heat the oil in a pan and peel and rub in the garlic clove, fry lightly and add tomato paste and paprika powder, fry briefly and add to the broth!

Inlay:

  1. Heat the butter in a pan and roast the oyster mushrooms. Cut the beef into slices. Peel and halve the eggs. Clean the spring onions, cut into rings and wash. Drain the bean sprouts. Wash and roughly chop the coriander. Clean the oyster mushrooms a little. Wash and roughly chop the coriander. Clean and wash the lettuce heart and finely cut into strips.

Completion:

  1. Sieve the noodles and distribute them on 2 deep plates, then place the beef and sprouts next to them and fill up with the stock. Spread the spring onions, lettuce, mushrooms and coriander on top and top with halved eggs! Serving If you don’t get any cooked udon noodles, you can use others of your choice!
