Ingredients for 4 servings:

  • 500 g onion(s)
  • 250 g mushrooms
  • 1 tbsp flour
  • ⅛ liter meat broth
  • Salt and pepper from the mill
  • 1 tsp mustard
  • 1 tsp lemon juice
  • 1 large gherkin(s)
  • 500 g beef fillet(s) or other good beef
  • 50 g butter
  • 100 g crème fraîche

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Peel and finely chop the onions. Trim and slice the mushrooms. Melt the butter in a pan, then sauté the onions and mushrooms. Sprinkle with flour and deglaze with a little stock. Season to taste with salt, pepper, mustard, and lemon juice. Cut the cucumber into thin strips and add them. Let the sauce simmer gently for 10 minutes. Place the fillet in the freezer for a short time to make it easier to slice. Cut the meat into strips, season them, and fry in a second pan in the butter for 5-6 minutes. Add to the pan with the mushrooms and onions, finish with the crème fraîche, and season again with the seasoning. This goes very well with cooked rice with peas and a mixed salad. Potatoes or any type of bread also go well with it.
