Ingredients for 6 servings:
- 1,000 g beef fillet(s)
- 300 g onion(s)
- 200 g gherkins
- 1 cup cucumber juice
- 2 glasses of dry white wine
- 400 ml sweet cream
- salt and pepper
- 4 tbsp oil

Sliced beef fillet in cream sauce
Finely chop the meat and season with salt and pepper. Sear in hot oil, cook in its own juices, and keep warm. Finely chop the onions and fry in the same pan in the meat juices and perhaps a little more oil. Add the finely chopped gherkins and fry. Fry until there is hardly any liquid left. Pour in the gherkin liquid and fry again until there is hardly any liquid left and it slowly starts to brown. The browner it gets, the more intense the sauce will be. Add the cream and wine and let it simmer a little longer to thicken the sauce. Now add the warm meat. Season with salt and pepper and serve immediately.
