Beef with broccoli and peppers

Ingredients for 4 servings:

  • 500 g broccoli
  • 2 bell peppers, red
  • 400 g beef fillet(s) or roast beef
  • 75 g peanuts, roasted
  • 4 tbsp oil (peanut oil)
  • 2 cloves garlic
  • 3 tbsp soy sauce
  • 3 tbsp rice wine, alternatively
  • Sherry, dry
  • 2 tsp cornstarch
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the broccoli and divide it into small florets. Peel the stalks and roughly dice them. Clean the bell peppers and cut them into strips. Pat the beef dry with a cloth and cut into thin slices. Chop the peanuts not too finely. Heat 2 tablespoons of oil in a wok, stir-fry the vegetables for 2 minutes, then cover and simmer for 2 minutes and remove. Heat the remaining oil and sear the meat, turning occasionally. Press the peeled garlic over the meat. Combine the soy sauce, sherry, and cornstarch and stir into the meat. Add the vegetables and bring to a boil. Season with salt and serve sprinkled with peanuts. Serve with fragrant rice.
