Beef with onion sauce

Ingredients for 6 servings:

  • 1 ½ kg beef, e.g. boiled beef
  • 1 kg onion(s)
  • Butter or margarine
  • Mustard
  • Sugar
  • Vinegar
  • cornstarch
  • 1 egg yolk
  • Salt

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours 15 minutes

Münsterland wedding dinner

Boil the beef in water, slice, and keep warm. Take about 3/4 liter of the broth. Dice the onions and fry in the melted butter or margarine until light yellow. Pour in the broth (3/4 liter) and simmer for about 1/2 hour (puree the onions if necessary). Thicken with cornstarch (very thick). Season with mustard, sugar, vinegar, and salt, sweet and sour, and blend with egg yolk. Serve with salad or pickles.
