Beetroot and horseradish relish

Ingredients for 1 servings:

  • 500 g beetroot, cooked, coarsely grated
  • 120 g red onion(s), peeled and chopped
  • 250 g apples, e.g. cooking or clear apples, peeled, pitted, chopped
  • 150 g brown sugar
  • 50 g horseradish, freshly grated, more to taste
  • 350 ml apple cider vinegar

Instructions

Working time approx. 2 hours; Total time approx. 2 hours

Mix everything together and heat gently until the sugar has dissolved. Bring to a boil and simmer, stirring occasionally, for about 75-90 minutes, until the vegetables and fruit are soft and have a jam-like consistency. Pour the finished relish into hot, rinsed twist-off jars, seal, and let stand with the lid on for 5 minutes. Once completely cooled, let stand in a cool, dark place for about 4-6 weeks. Delicious with cold meat dishes, grilled food, and cheese.
