Beetroot – Apple – Vegetables

Ingredients for 4 servings:

  • 4 small beetroots
  • 1 onion(s)
  • 2 tbsp oil
  • 250 g apples
  • 150 g yogurt or sour cream
  • herbal salt
  • Pepper, ground
  • possibly horseradish

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Carefully wash the beets and boil them in salted water until soft. This takes between 30 and 45 minutes, depending on their size. Rinse the beets, peel off the skin, and dice them. (It’s best to wear disposable gloves, as the beets stain heavily.) Sauté the finely diced onion in the oil, add the diced apples and the beets, stir in the yogurt, and simmer everything on low heat for about 10 minutes. Season with herb salt and pepper. If you like, you can add a teaspoon of freshly grated horseradish. Jacket potatoes or mashed potatoes are a good side dish.
