Beetroot patties

Ingredients for 4 servings:

  • 500 g beetroot
  • ½ tbsp butter
  • 2 tbsp semolina (wheat semolina)
  • 1 egg(s)
  • 2 tbsp breadcrumbs
  • ½ tbsp Clarified butter, for frying
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the unpeeled beetroot in plenty of boiling water. Let it cool in the boiling water, then peel and finely grate. Place it in a shallow pan, add 1/3 of the butter, and bring to a boil. Sprinkle in the semolina, stir well, and simmer for 12 to 13 minutes. Chill the beetroot briefly, then mix with the egg, salt, and pepper. Form patties and coat in the breadcrumbs. Heat the clarified butter and fry the patties until crispy on both sides. Melt the remaining butter and pour it over the patties before serving. Serve with sour cream and rice.
