Beetroot towers with herring salad

Ingredients for 4 servings:

  • 4 beetroots, cooked and peeled
  • 2 fish fillets, double Bismarck herring fillets
  • 1 apple
  • some lemon juice
  • 2 gherkins
  • 1 onion(s), red
  • 100 g sour cream
  • 100 g natural yogurt
  • salt and pepper
  • 1 pinch(s) of sugar
  • 1 apple, green-skinned
  • some lamb’s lettuce

Working time approx. 30 minutes; Total time approx. 30 minutes

Herring salad served a little more sophisticated

Cut four slices from each beetroot, approximately 0.5 cm thick, and set aside. Finely dice the remaining beetroot. Set aside four small pieces of Bismarck herring for garnish, then finely chop the rest. Core the apple, peel the onion, and dice it, including the gherkins. Drizzle the apple pieces with a little lemon juice. Mix everything with the sour cream and yogurt, and season with salt, pepper, and sugar. For each serving, top three beetroot slices with the herring salad, stack them on top of each other to form towers, and finish with the fourth slice (without lettuce). Garnish with slices of green apple cut to size and place them on top of the towers along with a piece of Bismarck herring. Dress the cleaned and washed lamb’s lettuce with a vinaigrette of your choice and arrange decoratively with the beetroot towers.
