Ingredients for 1 servings:

  • 1 tsp ground ginger
  • ½ tsp coriander seeds
  • ½ tsp cardamom
  • ½ tsp fenugreek
  • ¼ tsp cloves
  • ¼ tsp all-spice
  • ¼ tsp ground cinnamon
  • 1 tsp salt
  • 3 tsp cayenne pepper
  • 2 tsp paprika powder
  • 1 tsp pepper, from the mill
  • 2 tsp cumin, if desired
  • 1 tsp turmeric powder, if desired

Seasoning mix for Eritrean dishes (e.g. Zigni)

Dry roast the spice seeds in a pan for a few minutes. Allow to cool and add the remaining spices. Grind everything finely in a coffee grinder. Can be stored in a sealed container as a spice mix. To make things easier, you can also use the following variant: Mix all the spices together in ground form and dry roast them in a pan. This eliminates the need for grinding. The spice mix is ​​used, for example, in the Eritrean dish Zigni and gives it its well-known flavor. There are many different versions and homemade recipes for the Berbere spice mix. Simply vary the spices until you get a mix that suits your personal taste. In addition to the spices listed above, many recipes also include 2 teaspoons of cumin and 1 teaspoon of turmeric powder.
