Ingredients
 

  • 750 g Boiled potatoes
  • 200 g Diced onions
  • 200 g Fried or boiled meat
  • 2 tbsp Lard / fat
  • 4 Eggs
  • Salt pepper
  • Tomatoes and pickles as a garnish

Instructions
 

  • Boil potatoes in their skins. Let cool a little and cut into slices. Peel and dice the onions. Cut the meat into thin strips.
  • In a large pan, let the lard get hot over medium heat. Add the potatoes and fry until the underside is golden brown, then turn. If the 2nd side is also golden yellow, it goes on.
  • Now add the meat and onions and turn occasionally. Fry for 5 minutes and then season with salt and pepper.
  • Whisk the eggs and 4 tablespoons of water and also season with salt and pepper. Pour over the potato / onion / meat mixture and let it set. Please do not stir any more!
  • Arrange on preheated plates and garnish with tomatoes and cucumber. A freshly tapped blond definitely goes well with it!
