Ingredients for 4 servings:

  • 1 kg jacket potatoes, from the previous day
  • 50 g clarified butter
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel and grate the potatoes cooked the day before. Season with salt and pepper. Don’t be too sparing with the salt, but add more pepper. Add clarified butter to the pan, heat until hot, and add the potatoes. Spread evenly over the pan and fry for about 15 minutes per side until golden brown.
