Ingredients for 1 servings:
- 250 g flour
- 2 ½ tsp baking powder
- ½ tsp baking soda
- 1 tbsp lemon zest, grated
- 1 packet of vanilla sugar
- 1 egg(s)
- 150 g sugar
- 125 g butter
- 250 ml milk
- 220 g mixed berries, e.g. strawberries, raspberries, blackberries…

Raspberries, strawberries, blackberries – for 12 muffins
Preheat the oven to 200°C (180°C fan-assisted oven). In a bowl, combine the flour, baking powder, baking soda, and lemon zest. In another bowl, break the egg and whisk briefly. Then add the sugar, butter, and milk one after the other and mix well. Add the dry ingredients and mix well. Chop the berries, if desired, and gently stir them in. Pour the batter into the greased pans and bake at 180°C (160°C fan-assisted oven) for about 20 minutes. Then let it rest for about 5 minutes. Tip: Instead of berries, you can use any seasonal fruit. Chop them up.
