Berry quark strudel

Ingredients for 1 servings:

  • 1 pack of puff pastry, fresh, 275 g
  • 50 g butter
  • 250 g quark, 0.2% fat
  • 60 g sugar
  • 25 g vanilla sugar
  • 2 eggs
  • 1 packet of vanilla pudding powder
  • 200 g mixed berries, frozen
  • 2 tbsp, sifted breadcrumbs
  • 1 tbsp powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 25 minutes

Remove the puff pastry from the refrigerator about 15 minutes before use. Preheat oven to 180°C. Melt the butter. Mix the quark with the sugar and vanilla sugar. Mix in the eggs, custard powder and 2 tablespoons of melted butter with a mixer. Fold in the berries. Place a damp tea towel on the work surface and place the puff pastry on top. Brush with butter, leaving a little extra for the topping. Sprinkle with breadcrumbs and spread the berry and quark mixture on top. Fold the dough in slightly on the left and right, roll up the strudel with the help of the tea towel, and brush with the remaining butter. Lift it seam-down onto a baking sheet, removing the tea towel as you go. Bake in the hot oven for about 35 minutes. Allow to cool and serve dusted with icing sugar.
