Berry Superfood Smoothie

Ingredients for 2 servings:

  • 1 handful of blueberries, frozen
  • 1 handful of raspberries, frozen
  • 1 handful of strawberries, frozen
  • 1 pear(s)
  • ½ banana(s)
  • 1 lime(s)
  • 2 tbsp chia seeds
  • 1 cm ginger
  • Rice milk (rice drink) or coconut drink
  • Honey or agave syrup
  • 1 tbsp coconut butter, optional

Add the berries and chia seeds to the blender. The berries can be frozen or fresh. If they’re fresh, I recommend adding a few ice cubes to the blender to keep them chilled. Chop the banana. Chop the pear, including the core, and add the banana and pear to the blender. Squeeze the lime and add the juice. Peel the piece of ginger (the skin can be easily scraped off with the tip of a knife or a small spoon), chop it, and add it as well. Cover the contents with rice milk or coconut milk, add honey if desired, or agave syrup for a vegan version, and blend. If you’d like a little more coconut flavor, feel free to add a little more coconut butter. If the smoothie is too thick, simply add a little more of your chosen liquid or a little water. The great thing about chia seeds is that they’re little all-rounders and don’t need to be soaked like nuts, dried fruit, or other seeds. And since they’re relatively tasteless, you can add them to any smoothie, muesli, etc. When soaked, they become a kind of pudding, perfect for thickening desserts, for example.
