Ingredients for 1 servings:
- 200 g flour
- 80 g sugar
- 100 g butter
- 1 m.-sized egg(s)
- 4 m.-sized apples
- 200 g marzipan
- 2 tbsp cornstarch
- 300 g applesauce
- 250 g yogurt
- 1 cup sour cream
- 1 tsp, smothered cinnamon
- 1 cup of cream
- 50 g almond flakes
- 10 g powdered sugar
- 1 pack of cream stiffener
- 1 packet of vanilla sugar
- 1 tbsp sugar
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
For the pastry, knead the flour, sugar, melted butter, egg, and 100g applesauce. Roll out 3/4 of the pastry into a thin base in a greased 26cm springform pan and pre-bake for 5 minutes at 180°C. For the first layer, peel, core, and cut the apples into small pieces. Finely grate the marzipan and mix with 200g applesauce, yogurt, sour cream, cornstarch, cinnamon, and the remaining pastry until smooth. Spread the mixture onto the pre-baked base, arrange the apples on top, and press down lightly. Bake the cake for 30-35 minutes at 170°C. Remove from the pan and let cool. For the second layer, whip the cream with cream stiffener and vanilla sugar. Spread the cream onto the cooled apple cake. Dissolve 1 tablespoon of sugar in a pan and caramelize the almonds in it. Sprinkle the cream with the cooled, slightly crushed almonds and then with powdered sugar.
