Betti's spicy feta cheese pizza

Ingredients for 4 servings:

  • 500 g flour
  • 30 g yeast
  • 1 tsp salt
  • ½ tsp sugar
  • 300 ml water, lukewarm
  • 1 tsp oil
  • 1 package of tomatoes, pureed
  • 1 tbsp tomato paste
  • 2 peppers, hot from the jar
  • 1 garlic clove(s)
  • 2 tsp oregano or herbs de Provence
  • salt and pepper
  • 400 g sheep’s cheese
  • n. B. Olives, black

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

for 1 baking tray

Dissolve the yeast in 300 ml of lukewarm water and add the oil. Mix the flour with salt and sugar. Add the yeast, oil, and water to the flour and knead everything with your hands until you have a smooth dough. Place the dough in a warm place and let it rise for about 1 hour, until it has almost doubled in size. Mix the passata with tomato paste, finely chopped peppers, crushed garlic clove, and herbs with a spoon. Season the sauce with salt (not much, as the feta cheese is salty) and pepper. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Roll out the yeast dough on a floured surface to the size of a baking sheet, place it on a greased baking sheet, and spread the dough with the tomato sauce. Crumble the feta cheese and spread it evenly over the tomato sauce with the black olives. Bake for 20-30 minutes, depending on how brown you like your pizza.
