Ingredients for 4 servings:
- 1,200 g potato(s), waxy
- 1 kg low-fat curd cheese
- 1 bunch of chives, maybe more
- 200 g cream
- Salt
- pepper
- butter
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Spread on bread or with potatoes in summer, very refreshing and inexpensive
Cook the potatoes until tender. Meanwhile, mix the quark with the cream in a bowl. Depending on how thick or thin you want the quark to be, you can vary the amount of cream. Wash and finely chop the chives. Season the quark with salt and chives (you can use more chives if you like). Mix everything thoroughly and let it sit briefly in the refrigerator. Peel the cooked potatoes and then grate them. Toss them in hot butter and season with salt and pepper. Serve with the quark. This is a very light and refreshing dish on hot summer days. The quark can also be used as a spread.
