Vegetable patties

Ingredients for 4 servings:

  • 460 g potatoes
  • 460 g broccoli
  • 460 g cauliflower
  • e.g. vegetable broth
  • 1 garlic clove(s), squeezed
  • 80 g Parmesan, finely grated
  • 2 eggs
  • Parsley
  • Herbs (Italian herb mixture)
  • herbal salt
  • pepper
  • nutmeg

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 50 minutes

Boil the potatoes until soft. Cut the broccoli and cauliflower into small florets, leaving the stems intact. Cook the broccoli in vegetable broth for 10 minutes, then add the cauliflower after 5 minutes. Drain well. Peel the potatoes and mash them with the vegetables. Add the garlic, Parmesan cheese, eggs, and parsley, and season to taste. Form patties and cook for 6-10 minutes per side (depending on the size) over medium heat. The vegetable patties are also delicious cold.
