Ingredients for 4 servings:
- 250 g quark
- 1 tbsp vanilla sugar
- 1 lemon(s), zest
- 250 ml cream
- 5 egg whites
- 50 g sugar

Quark foam
In a bowl, whisk the quark until smooth and combine with the vanilla sugar and lemon zest. Whip the cream until stiff and fold into the quark. Whip the egg whites with the sugar until stiff and fold into the quark. Line a sieve with a clean cloth and pour in the quark foam. Keep refrigerated for 24 hours. The next day, arrange on a serving platter. Pour over the vanilla sauce.
