Ingredients for 1 servings:

  • 4 eggs
  • ½ bottle of butter-vanilla flavoring
  • 200 g sugar
  • 200 g butter, soft
  • 1 tsp, heaped baking powder
  • 400 g rice flour, regular
  • 400 ml coconut milk, creamy
  • some powdered sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Filipino coconut milk cake, makes about 12 cake slices

Preheat the oven to 160 degrees Celsius (fan-assisted). Beat the eggs until frothy. Stir in the sugar and flavoring, then add the butter and mix until smooth. Add the flour and baking powder and mix everything into a dough. Stir in the coconut milk until smooth. Pour into a greased and floured round cake pan and bake for 40-45 minutes. Once cooled, dust with powdered sugar.
