Ingredients for 6 servings:
- 3 cans of white giant beans, 200 g each
- 200 g tomatoes, dried
- 2 onions
- 4 garlic cloves
- 3 tbsp tomato paste
- 2 tbsp olive oil
- 2 tbsp harissa
- 3 tsp Italian seasoning mix
- 2 tsp cumin powder
- 1 can coconut milk
- 1 tsp vegetable broth, instant

Vegan one-pot recipe with a Mediterranean touch
Dice the onions and fry in a large pan with olive oil until softened. Crush or dice the garlic, add it, and fry briefly. Add the spices, harissa, and tomato paste, and fry for 1 minute. Make up to about 500 ml of coconut milk with water, add the stock powder, and pour it into the pan. Then chop the tomatoes, add them, and simmer for 5 minutes until the dish reaches the desired consistency. Season to taste, adjust seasoning if necessary, and finally add the drained and rinsed beans. Heat briefly, stirring gently. Serve with toasted white bread.
