Mussels with White Wine and Garlic (Rhenish Style)
The perfect biggi`s fish = mussels with white wine and garlic (rhenish style) recipe with a picture and simple step-by-step instructions.
- 3 kilogram Fresh mussels (medium-sized)
- 150 g Fresh celery
- 2 piece Carrots
- 1 Piece (rod) Fresh leek
- 1 Handful Parsley
- 0,5 liter White wine (Riesling)
- 0,5 liter Vegetable stock
- 0,25 liter Milk 3.8
- 5 piece Garlic cloves
- Pepper from the grinder
- Salt from the mill
- 50 g Butter
- For mussels, I like to use pre-cleaned ones. This saves me a lot of work. Unpack the mussel and check for damage. Be sure to dispose of opened ones. Then it comes to the vegetables.
- First put the brew in a sufficiently large pot. Bring the liquid ingredients to a simmer. Add the vegetables, cleaned and cut into bite-sized cubes. Let simmer for 5 minutes. Cut the garlic cloves into the finest cubes and sauté in the butter. Then also add to the vegetables. Let simmer for another 5 minutes.
- Now put the mussels on top. Pull this carefully (with the trowel) into the brew and then put the lid on the pot. Reduce the heat a little and steam the mussels for 8-10 minutes.
- During this time they prepare the table. A glass of accompanying wine, bread (black bread or baguette) and one shell kettle per person A little lemon can also be added.
- Now get the mussels portion by portion from the kettle and distribute them in the portion kettle. Pour a ladle of brew over it and enjoy.
