Bigi's yeast cake with apples and sherry cherries

Ingredients for 1 servings:

  • 500 g flour
  • 1 packet of dry yeast
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 75 g butter
  • 250 ml milk, warm
  • 2 packs of pudding powder, vanilla
  • 60 g sugar
  • 25 g butter
  • 400 ml milk
  • 2 apples, peeled, pitted, in thin slices
  • 1 cup cherry(s), pitted, preferably soaked in sherry the day before
  • Powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Knead the dough ingredients into a yeast dough, line a buttered springform pan, and form a narrow rim. Make a pudding from the pudding mix, sugar, and milk. Let it cool slightly, then mix well with the butter and spread it on the dough. Arrange thin apple slices and the drained cherries on top. Bake in a preheated oven (200°C/400°F) for about 30 minutes, ideally covering with aluminum foil after 20 minutes. Let it cool slightly and dust with powdered sugar.
