Black bean and papaya salad

Ingredients for 4 servings:

  • 45 ml lemon juice
  • 1 tbsp fresh ginger, finely chopped
  • 1 tsp honey
  • 60 ml olive oil
  • 1 tsp salt
  • ¼ tsp black pepper, freshly ground
  • 480 ml beans, black, ad can, drained, rinsed (2 American cups)
  • 2 m.-sized papaya, peeled, pitted, cut into 1.25 cm cubes
  • ½ small red onion(s), thinly sliced
  • 120 ml mint leaves, fresh, loosely filled (0.5 American cup), coarsely chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine the lime juice, ginger, and honey. Whisk in the olive oil. Season to taste and set aside. Combine the black beans, diced papaya, and red onion in a large salad bowl. Pour over the salad dressing and mix well. Cover with plastic wrap and refrigerate for 30 minutes. Stir in the mint and serve immediately. Great with grilled food.
