Black Forest Girl (Micki Krause)
The perfect black forest girl (micki krause) recipe with a picture and simple step-by-step instructions.
Cake:
- 4 Pc. Eggs
- 2 Ta Flour
- 1 Ta Sugar
- 0,5 Ta Almond semolina
- 1 Ta Cream
- 1 tbsp Vanilla paste
- 1 tbsp Cocoa
- 1 tsp Cinnamon
- 1 tbsp Baking powder
Cherries:
- 300 g Frozen sour cherries
- 75 ml Cherry juice
- 2 Pc. Star anise
- 50 ml Grenadine syrup
- 1 tsp Food starch
- 1 shot Balsamic vinegar of Modena
- 50 g Butter
- 5 Pc. Chocolate
Sour Cream Mixture:
- 250 g Mascarpone
- 150 ml Sour cream
- Vanilla paste
- 2 tbsp Powdered sugar
- 1 Msp Bio lemon zest
- Preheat the oven to 180 degrees.
- Mix all ingredients for the cake with the mixer. Fill into buttered mini cake molds and bake for about 10 minutes. Chopstick sample. When you are done, remove from the mold and let cool down briefly.
- Meanwhile, mix some cold cherry juice with the cornstarch. Heat the remaining cherry juice with the star anise and grenadine. Stir in the cornstarch and cherry juice mixture and briefly bring to the boil while stirring. Add the thawed frozen cherries and let them thaw. Remove the star anise and season with balsamic vinegar. Thicken with butter. Stir in chocolate slowly
- Mix the mascarpone, sour cream, vanilla paste, lemon zest and sugar and finally season with a little lemon juice.
- In a deep plate, put the cherry compote on the bottom, then spoon the mascarpone. Put some lemon zest on top. Top with the cake and dust with a little icing sugar.
