- 250 g Frozen raspberries
- 35 g Sugar
- 1 tbsp Raspberry spirit
the creme
- 15 g Food starch
- 1 Egg
- 185 ml Milk
- 20 g Sugar
- 1 packet Vanilla sugar
- 1 tbsp Raspberry spirit
- Chocolate shavings
- Let the raspberries thaw (it is better to have fresh ones). Sprinkle with sugar, add raspberry brandy, stir and let steep for about 15 minutes.
- Mix the cornstarch with 3 tbsp milk. Mix the rest of the milk, sugar and egg yolk well, bring to the boil. Just before cooking, add the mixed cornstarch and let everything simmer for about 3 minutes. Stir it again and again. Let cool slightly.
- Beat the egg whites with a pinch of salt until stiff and fold into the pudding. Perfume with the raspberry spirit.
- Divide the raspberries between two glasses, pour the cream over them and decorate with the grated chocolate and a leaf of lemon balm.
